Sweet Marshmallow Surprise
A mouthwatering dessert made with fluffy, homemade raspberry-flavoured marshmallows folded into a creamy blend of whipped topping and vanilla Greek yogurt. Topped with extra marshmallows and chocolate chips, this chilled treat offers a light, airy texture with a burst of fruity sweetness in every bite.
Ingredients:
- 1 pack marshmallow mix from Foster Clark’s
- 1 tsp raspberry essence from Foster Clark’s
- ¼ tsp pink food colouring from Foster Clark’s
- 150ml water
- 1 sachet vanilla whipping cream from Foster Clark’s
- 115ml cold milk
- 100g vanilla Greek Yogurt
- Corn flour from Foster Clark’s
- Chocolate chips for decoration
Preparation:
- 1. Prepare the marshmallow by emptying marshmallow mix sachet in a deep bowl with 150ml boiling water. Add ¼ tsp of pink colour and 1 tsp of raspberry essence. Dissolve the product using a spatula and let it rest for 10min. Mix the product by using an electric mixer on high speed for 4 minutes or until it becomes fluffy and aerated.
- 2. After mixing, place the mixture in a piping bag and using a medium size nozzle, pipe long lines. Lightly dust with corn flour on the piped lines and then set in the refrigerator for 4 hours. Once set, cut the lines into small pieces.
- 3. Prepare the whipping cream by combining 115ml of cold milk with 1 sachet in a deep bowl and beat on high speed with electric mixer for about 2 minutes. Then add 100g of vanilla Greek yogurt. Continue mixing for another 2 mins or until the mixture is smooth and fully combined.
- 4. Gently fold some of the marshmallows in the topping mixture using a spatula.
- 5. For serving, pour the mixture in 4 small bowls and flatten the surface. Decorate with more marshmallows and chocolate chips. Chill briefly and serve cold.
