Pancake Qatayef
A modern twist on the classic Middle Eastern dessert, replacing traditional dough with fluffy pancakes. Filled with qashta cream nuts, and drizzled with syrup, it’s a delicious fusion of old and new flavours.
Makes:
- 8-10 portions
Ingredients:
- 1 cup Buttermilk Pancake mix by Foster Clark’s
- 3 Tbsps oil
- 1 egg
- 160ml milk
For the filling:
- Qashta – as desired
- Nuts
For the syrup
- Equal parts of water and sugar
Preparation:
- 1. Combine the oil, egg, and milk with the pancake mix and stir well
- 2. When the pan is hot, pour over the mix.
- 3. When bubbles start to appear, flip the pancakes.
- 4. For the syrup, boil equal parts of sugar and water until all the sugar is dissolved.
- 5. Fold the pancake and fill with Qashta.
- 6. Drizzle with warm syrup and decorate with nuts.
